Es sind die ersten Oktobertage, die Kastanienernte hat gerade begonnen und wird die nächsten zwei oder drei Wochen andauern, erklärt Herr Laimer, der BAU und Futurefarmers im Zuge der Recherche der BAU Residency in das Unternehmen einführt. Bei einem Spaziergang durch die luftigen Weiten des Waldes fallen große Körbe voller Igel und Früchte auf, die darauf warten, einzeln von Hand aus der dornigen Schale entnommen zu werden. Der Anbau von Kastanienbäumen ist eine besondere landwirtschaftliche Praxis, die dank ihrer Saisonabhängigkeit der kommerziellen Logik der Intensiv- oder Monokulturproduktion widersteht: Die Erhaltung des lokalen Waldbesitzes ist für die Familie Laimer von wesentlicher Bedeutung, die sich nicht nur um die Gewährleistung eines Qualitätsprodukts, sondern auch um die Information und Aufklärung rund um den Verzehr der Kastanie bemüht.
On the heights above the small village of Postal, near Lana, the Kösti farm is in the fervor of its activity.
